Overnight Chia pudding breakfast

When I know I need to be up early and out of the door by 6 am, I don’t have time to create a lovely Instagram worthy poached egg with avocado toast. I need something nourishing and ready to chow down immediately. Preparing breakfast the night before is a huge bonus. It makes my morning much less stressful, and an essential fat-rich seed like chia fuels you until lunch. Eating these gelatinous pods reminds me of a very sweet drink my grandmother used to make for us that tasted a bit like a sundae when we were kids. Those were made with sickly sweet syrups whereas this is much better for you.



  • 2 tbsp chia seeds
  • 180ml almond milk (or coconut or dairy)
  • 1/2 tsp cinnamon
  • 1/2 tsp freshly grated ginger
  • 1/2 tsp cardamom seeds
  • 1 tsp honey


  • crushed nuts of your choice (I use cashews and almonds usually) (Or nut butter – I use the nut butter by Munch a bunch which are amazing)
  • Frozen berries or slices of orange or nectarine or figs(whatever is in season)

Combine all the ingredients in a bowl, stir, cover and place in the fridge overnight. Serve the mixture straight from the fridge and add nuts and fruits in the morning
