PCOS friendly slow cooker beef stew

Many women with PCOS will chose to go Keto. In reality keto will make inflammation for PCOS much worse so many times many of my clients will rebound and end up feeling worse than they did before after they started the keto diet.

So we want to make our meals balanced in terms of protein, fat and fibre. This will also ensure a better gut health.

We will be using a lean cut of beef for this stew. Beef contains vitamin B12 and zinc which are essential for women with PCOS. We will also be using turmeric and ginger which are potent natural anti inflammatory and full of anti oxidants.

 

Ingredients

400g of sirloin Beef, cut into 1 inch pieces and fat trimmed off

2 tablespoons of avocado oil

3 chopped carrots

2 large chopped onions

250g potatoes chopped

3 minced garlic cloves

2 cups beef bone broth

1 1/2 teaspoons turmeric powder

1 teaspoon ginger powder

1 tablespoon flour (gluten free if you are celiac or intolerant to gluten)

salt and pepper

 

Instructions:

Heat the oil in your slow cooker if it has the browning function and add the onions and garlic and brown until translucent

Add the  beef and brown until all of it is seared

Switch the slow cooker to the slow cook function and add in carrots, and potatoes, 1 1/2 cups of the bone broth, turmeric and ginger. Slow cook on high for 4 hours.

When the 4 hours is done whisk the flour into the remaining bone broth and and into the slow cooker and mix in until it has thickened.

It yields 4 portions

This stew freezes very well so you can also freeze portions.
